If you, like I, live alone, do your work around the house and cook most of your meals “Ad Hoc” I’m sure that there is many a meal you prepare for yourself that is simple, using things that you’ve found in your refrigerator and reasonably healthy. Having recently returned from a trip east to visit my daughter in N.Y, I’ve yet to get myself into my old routine. So, there wasn’t too much in the house last night for me to come up wlth anything complex. After checking what I had in the house, I prepared myself the following simple meal.
A Koven Quickie, Soup & Salad:
1 can Broth (Either Veggie or Chicken)
1 cup Pasta, left over from the night before. (The pasta was Rotini prepared with tomatoe sauce, sliced Bratwurst, onion, garlic and an assorment of Italian herbs.)
I cup Zucchini, left over from the night before.
1 small onion and about 4 more cloves of garlic.
I finished off the meal with a fresh salad using lettuce out of my kitchen garden, some peeled and sliced daikon, some peeled and sliced cucumber, some cleaned and sliced green onions and a half of a great red pepper, cleaned and sliced. (Of course, I had made myself my evening “Cooks Libation” of Gin & Lime Juice and Angastora Bitters.)
The Method:
Simple enough, in a small soup pot, saute the onions and garlic until soft, then add the rest of the ingredients. Cover and allow to come to a soft boil. Allow to simmer for about 15 minutes. Cut yourself a bit of bread to accompany the soup. Make yourself your Cooks Libation; relax and ENJOY.
Finish your dinner off with your good mixed salad.
