Pesach, Passover, Is April 3rd this year
I decided to list a traditional Jewish dish. When I was a young boy, growing up in Brooklyn, Brownville, it was during the great depression. My family was not religious; we still enjoyed our communities’ quiet transformation during the Jewish Holidays. Latka, were the typical treat, that everyone I knew used to make. Not just for Pesach, but regularly all year around. Everyone loved Latkas. So, I decided to give you my simple version. I know you’ll always make room for Latkas as part of your diet. So, here it goes!
Potato Latkas
6 medium potato’s, peeled and grated
1 large onion, grated
2 large eggs, beaten
1/3 cup Matzo meal or white flour
_ cup canola oil, for frying
A splash of garlic
Salt and pepper to taste
The Method
Peel potato’s and place in a large bowl
Add beaten eggs
Grated onions
Matzo Meal
Salt and pepper
Add garlic
Mix all into bowl with a wooden spoon, stir well
In a large skillet, heat canola oil
Add _ cup of Latka mix into canola oil
Flattening the Latkas slightly
Space the Latkas, so you can turn them easily
Brown and remove from the skillet
Place Latkas on paper towels, drain of excess oil
It’s time to dig in! Serve with either schmetana (sour cream), apple sauce or your favorite preserve
