[tag]Fougasse [/tag]is an Italian ?Flat Bread?. Many years ago, I learned how to make it from one of my Italian friends. You can eat it as a lunch knosh. Cheese or whatever can be an addition to your meal. It?s great as an accompaniment to anti-pasti. Worth all the work it takes!
Rising the Yeast
2pkg?s active dry yeast
cup water
1 Tbls sugar
cup flour
Forming the Bread
2 cups warm water
cup XV olive oil, use some later
6 cups unbleached flour
11/2 TSP salt
Things You Can Add
Chopped onion, garlic, rosemary, or herbs of choice
Sliced olives, black or green, 1 cup of grated cheese
Italian cheese is best, Mozzarella, Parmigiano, or Romano
Dried Tomatoes, and whatever pleases you!
Making the Bread
Put cup of water into a mixing bowl. Sprinkle the dried yeast evenly across the surface of the water. Sprinkle the sugar over the yeast.
Add cup of flour to the mix. Cover the bowl, place in a warm spot and allow to rise.
After the yeast has risen, add the ingredients slowly. Folding each till batter is smooth. Keep stirring, till it becomes difficult. On a lightly floured broad, knead for 15 min… Kneading gives the bread great texture. Lightly oil the mixing bowl. Place in a dry draft free place, until dough has doubled in size.
About in one hour, place on an oiled broad, divide into pieces of 8×12 inch, oblong and flat. Place in an oiled flat pan, or parchment paper.
Take care not to tear dough. Make even cuts. Allow to rise for 30 mins.
Place in the oven at preheated 400 degrees. Bake for 20 -25 mins. Writing this has made my mouth water.
