Today, Sunday, December 17, was one of those days when I managed to get myself swamped by work around the house and writing to friends etc. Finally, about 6:30, I realized that it was time for me to get some supper together. So I went into my fridge to see what I had on hand. I managed to find a couple of bratwurst sausages, some uncooked spinach, some Irish cheddar cheese and some tomato sauce. So here goes one of my impromptu dinners. (If you are single and live alone, it will surfice for dinner for you and friend that comes over to join you for dinner, or two days dinner for you alone.)
2 your choice sausages (bratwurst, Italian or Polish Kielbassa)
1 bunch spinach
5 cloves garlic
3 tbls. extra virgin olive oil
3 green onions
1/4 cup tomato sauce
1/3 cup lentils
2 cups h2o
1 tbls. powdered chicken broth
salt, pepper, a sprinkle of your favorite herbs
The Method
Slice the sausages into 1/4 inch slices and set aside. Slice the green onions and garlic and set them aside put the lentils in a small pot, add once cup of water and bring to a boil. Cover, lower the heat, and allow to cook for 12 to 15 minutes, stirring occasionally. Meanwhile put the spinach (which you’ve washed clean) into a larger poet, and a cup of boiled water, (to which you’ve added the tbls. of chicken broth.) Bring back to a boil. Turn the heat down to a simmer. Cover the pot and allow to cook until the spinach is wilted. Meanwhile turn on your oven and allow it to pre-heat to 275 degrees. In a small pot, put the olive oil, garlic and green onion (which you’ve sliced thin.) Bring to a slow boil until the garlic turns golden. Now, check the lentils until they’re soft. Now, in boat shaped baking dish, or whatever dish you have, put in a small splash of olive oil. Rub it over the entire dish. Now, put the cooked lentils into the baking dish, smoothing them out. Spread the cooked spinach to cover the lentils. Pour the olive oil, garlic and green onions over the spinach, spreading them out. Now cover the entire top of the dish with the sliced sausage. Push the sausage down until the slices are even with the top of your mix. Pour the tomato sauce over the whole surface. Add a bit of salt and pepper and your herbs. I used a bit of basil that I grow in my kitchen. Cover the baking dish with foil and into the oven with it. Bake about 25 or 30 minutes. Check after about 20 minutes to see if the sausage is cooked through.
