I got hooked on hummus the very first time I tasted it. Maybe it?s the fact that it?s made with ceci beans, (garbanzos) that I love. But this spread, common in all of the Middle East, will become a staple for you, once you?ve tasted it. When I called my Peruvian son-in-law, Edwin, last week and asked him what I could bring down with me for his birthday party, he unhesitatingly replied, Hummmus! Bring hummas!! So here goes with the basic recipe, and I?ll follow with a variation.
Hummus
2 cups Cooked Ceci Beans (you can use canned garbanzos if you wish)
1/3 cup Yogurt
1/3 cup Tahini, well mixed
1/3 cup Lemon Juice
Salt & Pepper to your taste
THE PROCESS
Into your food processor with it all, and on high, turn it into a spread. Taste, and add some of any of the above to suit your taste.
Here?s a variation you might find interesting:
GREEN HUMMUS
2 cups Cooked Cecis
1 cup Cooked Spinach
1/2 cup Parsley, chopped
2 Tbls Lime Juice + some zest
2 Tbls XV Olive Oil
1/3 cup Tahini
1/3 cup Yogurt or Sour Cream
Salt & Pepper & Lime wedges to garnish
THE PROCESS
Into the food processor with the beans, followed by the spinach. Let them get blended. Then, one by one, add the other ingredients. When it?s all turned into a thick paste, you can taste it and add a bit of whatever you please to suit yourself. If the paste is too thick, add a bit of either bean stock or any of the liquid ingredients to suit your taste. ENJOY!
