Cheese it!

I’ve been hooked on cheese, ever since I was a kid. In truth, I’m not alone with this passion. Almost everyone I know/knew, seems to have the same addiction. And for good reason, there is hardly any other source of food that offers the wide varieties of tastes to tickle our palette, that cheese does. One of the things that impressed me, long years ago when I was wandering around Europe, was the fact that every country I visited had varieties of cheese which were uniquely their own. In almost every country, on market day, the cheese venders would lean out of their enclaves and offer passersby samples of the cheeses they were vending. I loved it. What follows is the recipe for a dip that I created that almost everyone who has tasted it, liked.

Although I use Jalapeńo jack in the recipe, most of the heat from the Jalapeńos gets attenuated in the making of the dip. But, if you don’t like hot peppers, it will work well with almost any other cheese you prefer. Plain jack, any variety of chedder, etc, etc.

1/2 Lb. Jalapeńo Jack Cheese, cut into small pieces
8(+) Sun Dried Tomatoes, diced
4(+) Scallions, diced, (whites & greens)
3(+) Cloves Garlic, diced
4(+) TBL Sour cream (heaping spoonfuls)

If you wish, you can add some of your favorite fresh herbs to the mix. From time to time, I add some basil, which I have growing in a planter in my kitchen. All the (+)’s above only mean “to your tastes”.

THE PROCESS

When you have all of the ingredients ready, place the green onions, garlic, herbs, sun dried tomatoes, and about 3 TBLs of sour cream in your food processor. Turn it on high to macerate the ingredients. Gradually add the cheese to the mix, also the rest of the sour cream. Finally let the machine run until all has been turned into a paste like texture. Adding more sour cream or cheese in order to achieve the spread you want. Taste it, and see if you are satisfied with it. If not, add some more of whatever ingredients please you. When you’re satisfied, take it out of the food processor and put it into a bowl, one which you can place on the table when you are ready to sit down and eat. Also, serve some good bread or crackers with it.

Besides it being a good entreé to your dinner, it also makes a great simple lunch. ENJOY!!
