A Recipe for Kookies, Kookies

I don’t know anyone that doesn’t like cookies. Although I’m pretty good at keeping my sweet tooth under control, every once in awhile, I get a yen for some cookies. So here is a basic recipe that I’ve developed, (from a recipe given me by a friend) that I think you’ll like. In addition, they’re relatively easy to make.

Koven’s Kookies
1 Stick Butter, softened
1 cup Sugar
1/2 cup canola oil
1 lge egg, beaten
1 tsp Extract of choice
1 3/4 cups All purpose flour
1/2 cup Whole wheat flour
1/2 tsp baking soda
1/2 tsp cream of tarter
1/2 tsp salt
1 cup Butterscotch, toffee, or chocolate chips(more if desired)

You can add on 1 cup of nuts of choice, or toasted coconut, and/or dried fruit, or whatever would please you. eg: omit the candy bits and add a mix of chocolate and cocoa powder or grind about four Tbls. of coffee, or whatever.

The Process

In a large mixing bowl, cream the sugar and butter. Add the extract, oil & egg. Mix it well. In a smaller bowl, mix the flours, with the salt, baking soda and cream of tarter.

Gradually add the dry to the wet ingredients and mix until the dough is formed. Mix in the nuts, etc. etc. and add the toffee, butterscotch or chocolate bits. Mix well.

When well mixed, take a Tablespoon of the mix and roll them into balls between your palms. Place the balls onto parchment lined baking sheets about 1 inches apart.

Press each ball with the tines of a fork in order to mark them and compress them a bit. Bake in a preheated oven at 350º for 12 to 14 minutes or until edges begin to brown. When done, place the cookies on drying racks and allow them to cool. ENJOY!
